I'm setting up reporting on how we score on our SLA. Therefore I set up a custom report "time to first response - % met" and a report "time to resolution - % met". These reports show by default the score per day. I would like to have a report that shows a cummulative result - so not a calculation on how we score per day, but how we score over a year.
I cannot seem to find a way to adapt the report accordingly.

Let me clarify what you want it to look like. Do you want to select a specific date range (1 year) and be able to see the percentage of all completed tasks relative to uncompleted tasks? And also the percentage per day, did I understand correctly?
I want to get an overview on the SLA met (%) over time. Ideally a line graph showing the evolution overtime.
Now I get a % per day. But if on a specific date we do not get a new request or we do not solve one, the percentage drops to 0 for that day.

If you are okay with using third-party add-ons, then such information can be obtained from the SLA Time and Report for Jira app, in two charts.
On the SLA Met vs Exceeded issues graph, you can see the change in the number of completed tasks over time (over a year, in your case).
And the SLA Statuses Pie Chart will show you the percentage of tasks completed on time or violating SLAs.
