I think so, on a service desk, customers you can organize them into organizations, I think about that filed.

Same thing with labels would work, can i search labels values strictly?

You can only search for an exact label, there's nothing else. As far as I know, there are no "two word labels" allowed in Jira.
There is an issue for exact-text-searching in Jira:

But to get back to the organizations field: I don't know, if this is a text field. We do not use Service-desk.
