Thanks for the detailed explanation of the use case.
You might need an app like ScriptRunner to update custom field options dynamically. I have done that in Jira Datacenter but I don't have a similar usage of this for cloud on my belt this far.
Hope somebody can jump in and share an experience with us.

another App option is External Data for Jira Fields. Here you can define the Jira instance as a data source and use Dependant Fields to capture the values you need. You could also create a Search Field to build the selection fields of projects based on the customer.
Not the ideal way, but maybe worth a look.

Could you elaborate on your use case? There is a custom field for Organization in JSM that can be added to the screen if you wish.
Perhaps you want to create another custom field with a list of all organizations on your site.

I want to output the customer name. I would like to output this in a specially created user-defined field, this should be "customer" in German. I don't think the term organizations is very appropriate. The custom field is a selection field that should contain a selection of projects associated with this customer in addition to the customer name.

I have already considered this solution. However, since the customer name is there anyway, it would be stupid to let the user fill this field manually.
