We recently added Jira Service Desk. We also use Confluence. I am a member of the site-admin group. I tried out the Next-Gen projects but not being able to customize notifications makes it a no-go. So I'd like to create a Classic project.
However, when I click Create Project, I am not given the option to create a Classic project. My understanding is that only administrators can create Classic projects. Would site-admin be sufficient?
Any help would be much appreciated.

Have you clicked the “change Template “ link under the IT Service desk image?
Received this response from Atlassian which addressed by issue:
In some new instances indeed only Next-Gen projects are available by default. If you want to create a Classic one you will gonna need to first create a Next-Gen then go to the project settings > Advanced and enable the classic one

There is no option for selecting Advanced in the next gen service desk I have.

The response from Atlassian is new to me and my instances is not new so I do not see Advanced either. I’m guessing your instance is not one where this new behavior exists. I am also thinking that you do not have the necessary project creation permissions. Are you aware of someone that is your system admin? Do you have access to the following - Jira settings > system?
