after some trial and error with workflows, we have decided to create a new workflow for 'Problem management', can we implement this in existing projects and will it affect current issues that have been raised by customers?

you can apply your new workflow scheme to other projects and you might be asked to assign your issues to other statuses.
As it will become a shared workflow, all changes will apply to all projects that use that workflow. It will also no longer be a Simplified Workflow so someone with the Administer Jira global permission is then required to update your shared workflows.

if I have changed a status on an existing workflow, which has then changed that status on other workflows, how do I change it back as it keeps saying that status is in use on other workflows.
for example, I changed "in progress" to "in warranty" but need to change it back to "in progress" but it doesn't let me!

Try making a copy of the workflow, update it and assign it to the relevant schemes. Just replacing the status using edit will not be possible using the UI.
If you're adding the former In Progress status back, make sure to verify the current properties / post functions, validators, etc. on the current status.
Please have a thorough look at the documentation as workflows can become pretty complex.
