since the last version of jira service management server, we lost the ability to create personalized emails.
Indeed we only have yahoo, google and microsoft.

As per your description, it seems you are mentioning about the Other option.
The Other option is not showing up on the Server version because of this JSDSERVER-11219 BUG, which will be fixed in the next 4.22.2 minor version.

Thanks for asking, I forgot to mention that we have a workaround for this issue.
The workaround consists in disabling the multiple e-mail channels feature.
sd.multi.incoming.email.support.disabled
Note that this will disable the multiple email channels feature in the entire environment, affecting all projects
