we are working on Jira Service Desk Atlassian cloud Environment and would like to understand if it's possibile to restrict the visibility of one specific field of an issuetype/request type.
We don't care about Customer Portal, we should restrict field visibility in Jira SD using a project role or group.

As @Katarzyna mentions it is currently not possible to define it on a field level based on a group/rule.
Only way you can achieve hiding a field is simply removing it from the screens.
If you however want it to be only shown on a specific project/issuetype you can change the context of the field. (wasnt clear to me from the question)

Currently, cloud is very limited so it's impossible to do. Also no apps is available to achieve it because Atlassian doesn't publish any API to develop this feature by vendors.
