Product Management takes place in the Administration area.

If you do not see Administration at the bottom of the list then you dont have Org admin permissions

By product, do you mean that you have a custom field called product? It would be good if you added a bit more context around what you want to achieve, and maybe add a screenshot as well.

If you have a custom field called product you can modify the values in it by going to Settings > Issues > Custom fields, locate the field and then click on the three-dot menu and select Contexts and default value.
