Which ip should I whitelist on our mail server for the email puller ?

Cloud instances don't have particular fixed IP addresses. We do have some ranges you can whitelist. There is no guarantee that a specific IP address that your Cloud instance is using now is the one it will use in the future, so don't expect a particular address that you can see connecting today to be "the right one" going forward.
