Hi, i like to be able to trace the 'due date' changes of a ticket so that we can understand how many changes were made and by how much 'due date' has been changed
is there a way to get this information, ideally through excell or any other way

If you want to see due date changes for one specific ticket, you can check the History section under the Activity tab. There is no way to export it, except maybe via Rest API.
If you are considering add-ons, I can suggest Issue History for Jira, which can help with your request. It provides a report with changes for any issue field, including due dates. You can add any you need with the Column Manager. It's also possible to export the report to CSV/Excel for further analysis (count the changes made if needed).
