Is there a way to get all of you help desk tickets dumped into an excel or csv file?

sure. 

1. click on magnifying glass
2. Advanced search for issues
3. clear out the JQL search and enter what you want , e.g. project = myproject
4. click on the export button in the top right - box open at bottom with arrow down
5. choose CSV and either current fields or all fields
