We want to create an access request form in Jira Service Desk. Customers should be able to select a project from a project picker field. Once the request is submitted, the project lead should receive an approval email.
Initially, customers don't have access to any project but should be able to see all the projects in the project picker field. If we create any new project, that should be populated in the field automatically.
Can anyone help me with the script?
Note: We are using Jira Data Center v8.20.10 and ScriptRunner v6.40.0

You might try a third party app from the Marketplace that pulls data from external sources. Then you could keep a list of projects there and have a custom field that is populated by the external source (DB, XML file, etc. )
