I noticed in my project that from some statuses when we mark a ticket as "Done" it allows us to add notes and chose a close reason but from other statuses it doesn't let us do that.
I looked at the Workflows in our Project settings area and it looks like one path says "Done" and the other says "Resolved". How can i update this workflow so it is "Done" from every status?

You need to edit your workflow and use the reuse transition to replace Resolved with Done. By using the reuse you do not have to configure each transition.
Note that in order to update the workflow you need to be Jira admin.
