We use e-mailed requests in our JSM. The customers send e-mail with their signature. And JSM write this signature on the description field as you are aware. How can we hide the customer's signature from the description? The issue description field looks disorganized and crowded due to customer signatures.

The referenced document has the steps for implementing hiding of the email signatures when the issue is viewed in the portal or in the Jira UI that your agents use.
You must be a Jira site admin to hide email signatures.
Go to [Settings] > Products > Jira Service Management > Email requests
Under Hide email signatures in issues and portals select the detection method you want to use. You can choose to use one or both methods.
If you choose custom detection:
Enter your text into the text field.
Select Add.
To add more custom text, select Add a custom rule and repeat the first two steps.
