how do I add a field in the "create a project" field

I would like to add a field when I am creating a project. There is a place to add the name of the project and the key but I would like to add a few other pieces of searchable or categorical information

That is not something you can do with out of the box Jira. You might want to take a look at the Atlassian Marketplace for apps that might extend your options there.

The link I added does contain pointers to some candidates, but if they are a good fit obviously depends on what you are trying to achieve.
