Remove the default value from the date custom field you are referring to. Locate the custom field in admin settings, navigate to contexts and default value and remove the preset value there.
If you don't see any default value there, it is possible that a date is set via an automation rule as well. In that case, disable or modify the automation rule so the date is no longer set.
