Hi, our company uses JIRA cloud. I am trying to create a service desk project, but when I do I am not given a choice between software, business and service desk. It automatically defaults to software. How can I change
1) make a service desk project instead? or
2) change software project to service desk project?

When clicking to create a project we have the option "Change" to change the project's template.
Then on the next page, you will have a list of templates where you can choose between Jira Software, Service Desk and Business.
If you want to change the project type after the project is created, you must open the Project settings > Details and you will see a drop-down list with the types available:
