Because I've connected mulitple JIRA instances to crowd for setting up dev environments, the current group that grants access to JIRA Service Desk is "jira-servicedesk-users-2". Is there any way to change this in the UI so I can set it back to "jira-servicedesk-users"?

It sounds like you just need to change the group in JIra under Administration>Applications>Application Access:
If you need to change the group in Crowd that is allowed to access Jira, that is done in Crowd as described in Specifying which Groups can access an Application
