I want a text field (Reason) to be filled in by the users only when an Epic Issue type's Due Date is changed to a latter date.
Can I please get some help on if this could be done using Project Automation ?

Automation cannot be use for that sort of thing. It only performs some type of action based on a triggering action. It cannot force things to happen or pop up other screens.
There's no way to do this in real time with Jira Cloud. You could place place a Validator in the workflow so that the issue cannot be moved if the Reason field was blank. But but that's about it.
