utilize projects organizations as a custom field

Hi All - I've read through quite a few articles but I hadn't found exactly what I was looking for.  I was curious to know if (via native jira, vs 3rd party app) - is it possible to utilize organizations added in a project as a custom field, (not simply adding the organization field).  Reason being the naming the project wishes to use for reporting are differently named fields than 'organizations'.
 
For example, in a particular project our lead wants to be able to add new organizations to the project (under projects/project_name/add customer or organization) - and have an option within a service request ticket to select that organization list from a specifically named custom field - not just 'organizations'.

we do not have scriptrunner - and I was looking at options to having dynamic custom field that will refresh itself when a new organization is added to the project.   Thanks for any insight into options.
