Our requesters have expressed frustration around the functionality of the request list in the Help Center.
They would like to be able to filter requests by 'Client', however our Jira custom fields don't seem to be available when I go to the 'Edit list view' button (screen shot below).
Is this possible at all?
No this is not an option ootb, there might be 3rd party apps on the marketplace that are able to achieve this.

Natively, in filters, you can use: Status, Creator, and Request Type.
For columns, you can display: Type, Reference, Summary, Status, Service Project, Requester, and Assignee.
If you’d like to extend the filtering criteria or columns with your custom fields, there are solutions like the My Requests Extension app, which supports the following fields:
The admin decides which fields to make available as filters or columns, and to whom.
This plugin also allows you to create your own filtered request lists, share them with others, and export requests.

You can check our app Advanced Portal Reports. It will allow you to add any column to the request list and also enhance the filters: SLAs, Due dates, logged work, custom fields, labels, etc. Your customers will also be able to export all their JSM tickets.
