Is there a way to add logic to the Form's default setting for date fields?
The use case is I want to ask the customer for their requested due date but this particular request requires a two week lead time. I'd like to default the field to today + 2 weeks. It would also be helpful to throw an error if someone tries to request it earlier.

There is no "online" solution to do this scenario during issue creation in customer portal.
A suggestion is put a description to help the customer choose the 2 week dates, and from automation you can do some actions
- edit the date considering creation + 2weeks
- notify the customer and request their feedback over email
If this is not a solution, i suggest trying to find an add-on to support you.
