Jira issues have an audit log so that you can see who changed what field. Does the same thing exist for the Forms?
Can you clarify your def of "who changed what field" - Are you referring to field configuration or who changed an field value within an issue.
If it is referring to field configuration - then here is a link regarding to audit logs - https://support.atlassian.com/jira-cloud-administration/docs/audit-activities-in-jira-applications/
On the Forms side, I am not aware there are any audit logs available. There is current enhancement ask on the Forms side - https://jira.atlassian.com/browse/JSDCLOUD-10657

Thanks for the response. Just as Jira capture who changed a specific field and when in the Issue History, I want to see the same thing on a Form. If I have a customer who submits a form and then the Agent goes and changes a value on the form, I want to see who changed that form value and when. This is important for auditing purposes.
The workaround is to store all of the Form values in Jira fields. Then Jira will capture those changes as part of the issue changelog.

If you looked at the enhancement case, it does include what you are asking (I believe) for issue history against Forms -
Best, Joseph
