I have created a custom field with drop down options and need to add and edit some dropdown options.
How do I do this?
What I have done:
This custom field has 7 screens and 1 context
Your #3 should do the trick. You should see your values there under Options and you click edit options.

First of all - Welcome to the community.
In your 2nd image, you should be able to click on "Edit Options" to add/edit options for your custom field Product. Your first image has to do with field property for Product (example if you want to change the field name etc..)
In general -
To edit the custom dropdown list options, you will need Jira system admin right, then access Jira Administration >> Issues.
Once in the Admin UI, click on "Custom fields" to access the custom fields listing.
Identify your custom field and then click on the "..." button associated to your field and then select the "Configure" option. From there you should can edit the context associated to your project for the field.

Can you share a screenshot of the configuration of the custom field where you it lists all the contexts?
Also, need to know the project name where you want to add the options too.
I suspect that that you may have to create a next context so that it displays the options you want for your project.
