No, you cannot make individual attributes read-only, you can only make the whole object read-only if you assign them the user role. You can find more information about roles here
The only thing I could find in JAC was this one for server, JSDSERVER-7288. So my advice would be to go ahead and create a request for Cloud and reference this one.
