You can allow your customers editing their request using app developed by my team: Feature Bundle for Jira Service Management. One of features in this app is possibility to define which and when fields can be edited by customers on the portal. When you configure the form, it's available on the request details view as a link which opens a screen with fields.
This is a paid solution but free up to 10 users.
