I have accidentally deleted the "Context" of a Custom Field so have lost all of the Dropdown options and data collected on this mandatory field in all of our tickets!

I'm afraid we can't tell you anything more than the document you have found.
The starting point is the backup though. Have you got a recent backup of the system from before you deleted the field context? If you do not, then there's little point in worrying further, there's nothing you can do other than add it back and re-enter the data you can remember
Thanks Nic and @Joseph Chung Yin . As this is used by a big Government department we decided to manually fix the 10+ support tickets by re-adding the deleted field info. Doh!

I agreed with @Nic Brough -Adaptavist- response. The best thing you can do is restored the db from back-up (however you will loose the newly entered data since your last back up).
In this case, I would also recommend you to submit an urgent support request with Atlassian for direct assistance.
