I am trying to add an approval stage to a workflow and can do it for individual users
without any problem.
What I would like is to have a group approve rather than individual members
so I'm looking for a "group approvers" option or similar.
I have seen this for JSM on some videos, but it not appearing for me

Can you maybe share some additional details/steps on how you got to this screen? (looks a bit 'old')
I'm guessing you're on the JSM cloud? Also, are you a Jira admin?
This is how, for example, pop-up for configuring the approval step looks like at one of our instances. Basically, I've opened workflow > selected status where approval is to be set > *Edit button next to approval option and this is how it looks like.
On DC it's probably a bit different.

I have admin permissions, so perhaps the approve by group is a later version?, I can look into that

I'm not sure about DC/server and I don't have any instance to check it out :/
I've tried checking JAC (public open features/bugs) if there's anything related to what you're looking for. I'd suggest checking yourself.
If groups are not supported, maybe you could use Assets and those fields as some kind of workaround 🤔 Again, I haven't played much with DC (I could check with some of my colleagues who are working on DC environments to potentially test it out).
