What am I doing wrong in this automation syntax?

I am having some issues figuring out why when users create issues via email they are not being mapped to the correct fields in JIRA and coming into the system looking like this:
I have came up with some automation code to get it to populate correctly, but still having some issues, any suggestions or pointers would be greatly appreciated! Even if I can get one field to pull in, I should be able to populate the others...
