Out of interest -
Will Jira Service Desk (Server edition) continue to operate as usual after its end of support date, even though you won't receive updates and support by Atlassian? I'd like a clear picture of what to expect beyond the support expiration date.
my understanding is that while Atlassian will no longer provide technical support, security updates, or bug fixes for Jira Service Desk Server after the end of support, the product itself will still be functional. That is, that you will still be able to use the service desk for raising tickets and managing existing workflows.

That is correct. When you buy the license you can continue to run it as long as you want, but Atlassian won't support it past end of support.

Do you know if the same applies for extensions such as (but not limited too) - Powerscripts, Workflow Essentials , Zephyr Squad etc ?

I can reassure you that what @Kian Stack Mumo Systems mentioned applies to Power Scripts (and other Appfire apps). You can keep on using the Server version for as long as your license runs!
